Australian Meat Processor Corporation (AMPC) and Meat and Livestock Australia (MLA) have recently funded a research program in Australia to improve knife sharpening skill in meat processing plants. This has involved using a sharpening program developed by the New Zealand meat industry. The program utilizes 'setters' (a sharpening jig that controls the angle of the stone in relation to the to the blade edge) to standardize sharpening and stoning technique. The workshops are run at the individual plant level over 2 or 3 days.
